Kid Approve Roasted Broccoli

If you are anything like me, it’s the beginning of the year and you are SO over the holiday ten-pound weight gain or (like me) continuously working on the last of the baby weight. (Yes… my baby is over two years old and STILL working on it….its a struggle for real!) And like me, and so many other moms my resolution is to eat healthier! I want to feel better, lose weight, and most importantly provide valuable nutrition to my little ones! We all want to find easy ways to keep our New Years Resolutions. This is definitely easier said than done. Busy careers, kid’s schedules, home projects, and so on and so on! Eating prepackaged meals or fast food is an easy fix, but have you ever checked the nutritional value? During my high school teaching years, I made it my mission to find simple recipes that my family and I enjoyed. Since I primarily do most of the cooking for our four kids, I refuse to make different meals for myself or anyone else in my family. The ole’ saying; you eat what is on the table or you do not eat at all…. It’s harsh, but for real….four kids…I’m not running a restaurant. LOL!

This recipe I’m sharing is simple and ALL my kids love it! Even my picky eater, who only eats the broccoli trunks…I’ll take that as a win! (He’s super picky and that’s a story for a later date!) And It’s super easy and anyone can make it! They are simply garlicky, crispy, and delightful! Enjoy!

Ingredients

  • 8 Cups of Broccoli

  • 4 Tablespoons Oil of your choice

  • 3 teaspoons Minced Garlic

  • 2 teaspoons salt

  1. Preheat oven to 425 degrees. I love using a Pampered Chef stone, but if you do not have one, a greased cookie sheet will do just fine.

  2. Cut up broccoli florets, the smaller you cut them up the crispier they are. Place the broccoli florets in a bowl large enough to stir and coat the broccoli with the remaining ingredients.

  3. Coat the broccoli with oil. I keep a variety of oils in my pantry such as olive, canola, and vegetable. Use whatever you have in your pantry. My philosophy is I’m getting my kids to eat vegetables, It’s a win! So If I have to use a less healthy oil like vegetable oil so be it!

  4. Add Garlic and salt and coat the broccoli. You can also substitute minced garlic with garlic powder and if you have garlic lovers add more!

  5. Place coated broccoli florets on a baking sheet. Spread out the florets to a single layer and I try to arrange most of the florets cut side down. This keeps

  6. Place in the oven for 25 minutes. If you prefer crispier, add 5-10 more minutes.

    EXTRA TIP: This recipe is also great in an air fryer! Check your brand’s recipe book for appropriate temperature and time. Seriously I usually never measure anything out. Just measure with your clean hands a gauge how garlicky or salty your family prefers.

    P.S. My kids also enjoy parmesan cheese added after they are baked! Everything is better with cheese…right?!?

It is so important to feed our families with quality ingredients, but sometimes it is so hard to find the right recipe that everyone can enjoy.
